Here, in the foothills of France’s Cévennes mountains, grapes grow on gravel and limestone-clay soils. Made from a blend of Grenache and Cinsault, the grapes are destemmed and crushed before a direct pressing. The wine receives its light, rosy color from brief contact between the juice and skins, prior to a long, cool fermentation in concrete vats.
