Ingredients
- 6 slices prosciutto
- 6 slices thick brioche bread
- 3 eggs
- 1/3 cup milk or cream
- 1/2 cup finely grated parmesan, plus more for serving
- 2 tbsp chopped chives, plus more for finishing
- 2–3 tbsp butter
- Black pepper
- Zest of 1 lemon
- Salt
Directions
- Preheat the oven to 400°F. Arrange prosciutto on a parchment-lined baking sheet and bake for 8 to 10 minutes until crisp. Transfer to a paper towel-lined plate.
- In a large bowl, whisk eggs, milk or cream, 1/4 cup parmesan, chives, black pepper, and a pinch of salt.
- Dip each slice of brioche into the mixture for 5 to 8 seconds per side until coated but still holding its shape. Let it sit briefly so it absorbs. Sprinkle parmesan on top.
