Easy Mango Shrimp Tacos with Cilantro Lime Sauce & Rosé

Mango Shrimp Tacos

Ingredients

For the Shrimp

  • 1 1/4 lbs shrimp, peeled and deveined
  • 2 tsp olive oil
  • Chili powder, to taste
  • Salt, to taste

For the Mango Salsa

  • 1 cup mango, finely diced
  • 1/2 cup red bell pepper, finely diced
  • 1/2 jalapeño, minced
  • Juice of 1 lime
  • 1/2 cup cilantro, finely chopped

For the Creamy Cilantro Lime Sauce

  • 1 cup sour cream
  • 1/2 cup cilantro, roughly chopped
  • 2 tsp lime juice
  • 1 1/2 tsp honey
  • 1/4 cup prepared salsa verde
  • Salt and pepper, to taste

For Serving

  • 1 cup shredded purple cabbage
  • Flour tortillas

How to Make Mango Shrimp Tacos

  1. Start by making the mango salsa. Combine the mango, red bell pepper, jalapeño, lime juice, and cilantro in a bowl. Gently toss to combine and set aside.
  2. Next, prepare the creamy cilantro lime sauce. Combine the sour cream, cilantro, lime juice, honey, and salsa verde. Season with salt and pepper to taste.
  3. Heat the olive oil in a skillet over medium heat. Season the shrimp with chili powder and salt, then cook until pink, opaque, and cooked through.
  4. Warm the flour tortillas and add a layer of shredded purple cabbage. Top with the cooked shrimp, mango salsa, and creamy cilantro lime sauce.
