An Easy Wine & Burrata Recipe Pairing

Peach & Burrata Appetizer Paired with Vinho Verde

The Wine Pairing: Lot 205 Vinho Verde, Portugal 

Lot 205 Vinho Verde is the perfect companion to this appetizer. Produced in Portugal's renowned Vinho Verde region, this crisp, lightly effervescent white wine is bursting with bright citrus and refreshing acidity. It's the ideal match for sweet peaches, creamy burrata, and savory prosciutto, creating an effortless wine and food pairing.

The Recipe: Serves 4-6 

Ingredients:

Vinaigrette:

  • 6tbs olive oil
  • 3tbs champagne vinegar
  • 1 small shallot, minced
  • 1 tsp dijon
  • 1 tsp honey
  • ½ tsp salt
  • Fresh cracked pepper

Appetizer base: 

  • 3 ripe peaches, sliced
  • 1 c tomatoes, sliced
  • 2 balls of burrata
  • 1 pack (4oz) prosciutto
  • Toasted pistachios
  • Fresh basil to garnish 
  • 6-8 pieces of toasted sourdough bread, rubbed with garlic
  • Chilled 90+ Cellars Lot 205 Vinho Verde

 

Instructions:

Make the vinaigrette:

  1. In a small bowl, combine minced shallot and champagne vinegar and set aside for 5-10 mins. 

  2. Add remaining ingredients to a mason jar along with the soaked shallots. Shake to emulsify and season to taste. 

Prepare the platter:

  1. Arrange a layer of sliced peaches and salted tomatoes on a large platter.

  2. Tear burrata into chunks and tuck ribbons of prosciutto anywhere you see fit. 

  3. Drizzle the platter with vinaigrette. Sprinkle toasted pistachios and tear fresh basil over top. Finish with maldon salt and fresh cracked pepper. 

  4. Enjoy with toasted, garlic rubbed sourdough.


Notes:

  1. Serve Vinho Verde chilled.

  2. Lightly salt sliced tomatoes before plating. 

  3. This app tastes best with friends.
