Summer entertaining just got a little sweeter!
This summer, we're taking one of our favorite sparkling cocktails beyond the glass. Inspired by the bright, refreshing flavors of an Aperol Spritz, this layered dessert combines Lot 50 Prosecco-infused vanilla cake, citrus, creamy vanilla pudding, apricot preserves, and homemade whipped cream into a showstopping treat that's perfect for brunches, backyard gatherings, and everything in between.
Created in the 90+ Cellars Test Kitchen, it's a fun new way to enjoy the flavors of your favorite summer cocktail.
Made with Lot 50 Prosecco
The secret to this recipe starts with the same ingredient that makes an Aperol Spritz so refreshing: great Prosecco! Lot 50 Prosecco brings crisp bubbles and bright citrus notes to the cake, creating a light, flavorful base that complements every layer.
Aperol Spritz Trifle Recipe:
Ingredients

For the Cupcakes
- 1 box vanilla cake mix
- Ingredients called for on the box, substituting ¾ cup Lot 50 Prosecco for an equal amount of water
- Zest of 1 orange

For the Filling
- 2 (3.4 oz.) boxes instant vanilla pudding mix
- 4 cups whole milk
- ¼ cup Aperol
- ⅓ cup apricot preserves
- 2 tbsp Aperol
- 3 oranges, peeled and segmented
- 2 cups heavy cream
- ¼ cup powdered sugar

1 tsp vanilla extract
Directions
Bake the Cupcakes
- Prepare the vanilla cupcakes according to the package directions, replacing the water with Lot 50 Prosecco and folding in the orange zest before baking. Allow them to cool completely, then cut it in half.
Make the Pudding
- Whisk together the vanilla pudding mix and milk until thickened. Stir in the Aperol until smooth, then refrigerate until ready to assemble.
Mix the Apricot Layer
- In a small bowl, stir together the apricot preserves and Aperol until smooth.
Whip the Cream
- Using a hand or stand mixer, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Assemble: In a stemless or stemmed wine glass, layer:
- Fresh orange segments
- Prosecco cupcakes
- Aperol pudding
- Whipped cream
- Apricot preserves mixture
Repeat until you've used all of the ingredients, finishing with a generous layer of whipped cream & top with a splash of our Lot 50 Prosecco!
Garnish & Chill
- Top with fresh orange zest and, if desired, an orange slice for garnish. Refrigerate for at least one hour before serving.
