DESCRIPTION
With viticulture in this area dating back to the late 18th Century, Paso Robles has had a long journey to become one of California's premier wine regions. Today, wine from Paso Robles is typified by rich,
ripe reds from warm-climate varieties. In the most southern part of Paso, where this wine originates, vineyards thrive thanks to the marine influence of the Pacific Ocean. Coastal fog protects the grapes
during warmer months and a diverse set of soil types creates wine with structure and intensity.
This Cabernet Sauvignon is harvested from vineyard blocks a mere 20 miles from the Pacific Ocean. Grape bunches are brought to the winery where they are destemmed, crushed and fermented under controlled conditions which allows for maximum extraction of color
and flavor while maintaining a silkiness of texture. The wine
matures in the cellar for up to 10 to 12 month prior to bottling.
TASTING NOTES
A long growing season produces a scrumptious Cabernet Sauvignon with fully pronounced flavors and an elegant structure. With its luxuriously smooth tannins and dense fruit flavors this is a wine to savor with every sip. Aromas of violets and blueberries linger with hints of tobacco on the finish.
