With viticulture in this area dating back to the late 18th Century, Paso Robles has had a long journey to become one of California's premier wine regions. Today, wine from Paso Robles is characterized by rich, ripe reds from warm climate varieties. In the most southern part of Paso where this wine originates, vineyards thrive thanks to the marine influence of the Pacific Ocean. Coastal fog protects the grapes during warmer months and a diverse set of soil types creates wine with structure and intensity.
Cabernet Sauvignon is harvested from vineyard blocks a mere 20 miles from the Pacific Ocean. These bunches are brought to the winery where they are destemmed, crushed, and fermented under controlled conditions, which allows for maximum extraction of color and flavor while maintaining a silkiness of texture. The wine matures in the cellar for up to 10 to 12 months prior to bottling.
