    The beauty of Pinot Noir is its ability to absorb and reflect the place where it grows. No other red grape allows itself to carry and convey nuances of soil and sunlight like this one. Medieval monks were the first to recognize this quality and went about cultivating the grape on plots of land in and on the outskirts of Burgundy's many villages. Several of the villages located in the north are part of the Côte de Nuits, a gently sloping east facing hill of clay and limestone that has become the benchmark for Pinot Noir all over the world.

    This wine comes from the Cotes de Nuits-Villages appellation which means that the Pinot Noir grapes that go into the wine must be grown in a select grouping of villages in Burgundy's Cote de Nuits sub-region. The grapes are hand harvested and 100% destemmed prior to fermentation. Vinification is done in the Burgundian tradition of open tanks for 10-15 days with regular pigage, or punch downs. The finished wines are lightly pressed and mature in a blend of new and neutral oak for twelve months.


    Fresh red cherries burst from the glass along with notes of violets and a subtle toastiness. The wine's fresh acidity and ripe, silky tannic structure combine to create a nervy texture and a long red fruit and mineral-driven finish. Serve alongside your favorite pate, slow-braised veal, or a smooth but sharp cheese like Ami du Chambertin.
