When it comes to celebrating New Years, bubbles are a must. And there’s so much variety in the world of sparkling wine that the possibilities are endless when it comes time to choose something sip on the 31st. Champagne is wonderful for intimate toasts; Prosecco is simple, refreshing, and priced just right for large groups; and sparkling Rosé can add a festive splash of color and flavor to your celebration. Though bubbly is great solo, if you want to serve your guests something fun and different, consider making a sparkling cocktail. These libations with a sparkling wine base are sure to please everyone at your New Years Eve Party and make for a memorable toast to 2013. We asked some of our bartender and DIY-master friends around Boston to create a few recipes with our sparkling selections for the new year, here are the results:
Hot ‘n Cold
Apple Chai Sparkler by Tatiana Ciccone of Storyville
• 4 cups vanilla rum
• 2 cups of apple juice (we used Trader Joe's organic, unfiltered apple juice to avoid adding extra sweetness to the cocktail)
• 1 cup of Tazo Chai Concentrate
• 12 dashes of orange bitters
• 1/4 bottle of 90+ Cellars Prosecco
Combine all the ingredients by shaking, then add the Prosecco. To serve hot, warm up the rum, juice, and chai concentrate together before incorporating bitters and Prosecco.

Sparkling Spiced Pear Sangria by Melissa Massello of Shoestring Magazine
• 2 bottles 90+ Cellars Prosecco
• 2 cups Bully Boy vodka
• 2 cups Mathilde Poire pear liqueur
• 2 cups pear nectar
• 1 liter VitaCoco coconut water
• 2 liters soda water
• 1 Bartlett pear, thinly sliced
Pour vodka, pear liqueur, pear nectar, coconut water, thinly sliced pears and cinnamon sticks to taste (we suggest 2 sticks) in large punchbowl, then stir vigorously to combine. Refrigerate for at least one hour. Just before serving, add Prosecco and soda water. Serve immediately.
Dark and Stormy and Bubbly
The Saint Domingue by John Nugent of Citizen Public House
1.5 oz Smith & Cross Jamaica Rum
1/2oz lime juice
1/4oz allspice dram
1/4oz ginger syrup,
Splash of 90+ Cellars Prosecco
Combine rum, lime juice, allspice dram, and ginger syrup in a glass. Stir and top with Prosecco.

3-4 oz 90+ Cellars Sparkling Rose
.75 oz PAMA
Pomegranate Liqueur
.75 oz King’s Ginger
.25 oz lime
juice
2 dashes Angostura bitters
In a shaker tin add all the ingredients except the 90+ Cellars Sparkling Rose. Add ice and shake. Double strain into a champagne flute. Top with 90+ Cellars Sparkling Rose. Garnish with a twist of lime.
